As the animals used for game tend to be far more athletic than their farmed relatives, their muscles tend to be more developed, and consequently, their meat tougher. Marinating can help to tenderise and moisten the meat; vinegar helps to break down tough fibres, oil adds succulence, and wine, herbs and spices permeate the meat with flavour.
