A goose is a large bird, perfect for roasting for family get-togethers, and the traditional Christmas celebration dish.

A green goose (or gosling) is a tender and delicate bird of no more than 3 months of age. It weighs up to about 2 kg (5 lb) and is available at the start of the goose production season, which runs from September to the end of December. After the age of 3 months, the goose becomes larger and heavier, but perhaps not as succulent. Although goose remains delicious with advancing age, it will need longer and longer periods of braising or stewing to ensure that it becomes tender enough to eat.
