Cleaning Round Fish

If you want to cook a round fish whole, it is essential to remove the bitter-tasting gills and guts.

  1. Lay the fish on its back and ease open the gill flaps.
  2. Push the fan of gills out from between the gill flaps; cut them out and throw them away.
  3. Trim away all the fins with scissors.
  4. Cut open the fish's belly and ease out the guts.
  5. Rinse the fish thoroughly, inside and out, under cold running water.
