Preparing Citrus Fruits

  1. Using a serrated knife, cut a thin slice from the top of the fruit to expose the flesh.
  2. Standing the fruit upright, continue to slice the peel away from the flesh, cutting just beneath the white pith.
  3. Holding the fruit in one hand, cut alongside each side of the membranes to free each segment.
  4. The resulting segments should be completely free of membrane and pith.
