Trussing a Chicken or Game Bird

  1. Place the bird on a board, breast side up.
  2. Take a piece of kitchen string about 1 m (3 ft) long, and loop it centrally under the tail.
  3. Cross the string over the top of the tail, and then bring the string up over the ends of the drumsticks.
  4. Cross the string tightly over the drumsticks to tie them together and close to the tail.
  5. Pull the ends of the string towards the neck end and then pass them under the pointed end of the breastbone and over the thighs.
  6. Turn the bird over.
  7. Pull the string over the wings, pressing them close to the sides of the body.
  8. Tie the string over the neck flap of skin.
